Grapefruit Donuts
These donuts have a light pink hue, and an extremely unique flavor. Try adding pink sprinkles to give them an extra colored touch.
Yields: Makes 15 to 18 donuts.
Ingredients
- 1 cup of milk
- 1/8 cup of grapefruit juice
- ¼ cup of sugar
- 2 ¼ teaspoons of instant dry yeast
- 2 eggs
- ½ cup of butter (plus an additional 2 tablespoons), melted
- 4 cups of flour
- ¼ teaspoon of salt 1 tablespoon of grapefruit zest
Oil for frying
- For the Glaze
- ½ cup of grapefruit juice
- 2 ¾ cup of powdered sugar
Method of Preparation
- Warm the milk and grapefruit juice in the microwave for about 1 minute.
- Add the sugar and stir until it dissolves.
- Add the yeast and stir an additional one or two times. Set aside and let it bubble for 5 to 8 minutes.
- Stir the eggs in with the melted butter. Pour the egg mixture into a mixture with a dough hook attachment. Turn it on low.
- Pour in the yeast mixture. Add the flour one cup at a time. Then, add the salt and zest.
- Turn the mixer up slightly and allow it to knead the dough for 8 to 10 minutes. Add another teaspoon of flour if the mixture seems too runny.
- Put the dough in a lightly greased bowl. Cover, and refrigerate overnight.
- Roll out the dough onto a lightly floured surface until it is ½-inch thick and cut out the donuts.
- Cover the donuts with a towel and set them in a warm place. Allow them to rise for about an hour.
- Heat oil in a pot until it reaches 375º F. Fry the donuts for about 30- 45 seconds on each side and them remove them to a layer of paper towels to drain the oil.
- Allow the donuts to cool.
- Whisk the glaze ingredients together in a bowl. Dip the cooled donuts into the glaze. You may need to dip them in the glaze twice. Allow the glaze to set by putting the donuts on a wire rack above a baking sheet lined with wax paper.
