Gluten Free Donuts

These little donut holes are a great donut substitute. They are light and airy, resembling a yeast donut. Cover them in sugar, and your guests will never know they are gluten free!

Yields: Makes 4 Servings.

Ingredients

  • 5 tablespoons of coconut milk
  • ¼ tablespoons of gluten-free all- purpose flour
  • 1 egg
  • 2 tablespoons of almond flour
  • 2 tablespoons of coconut flour
  • 2 teaspoons of honey
  • ¼ teaspoon of guar gum
  • Oil for frying

Method of Preparation

  • Heat oil in a saucepan or deep fryer to 300º F.
  • Mix all of the ingredients in a bowl using a hand mixer. The batter should resemble a heavy pancake batter.
  • Drop the batter in spoonfuls in the hot oil. Fry in batches. The donuts should be dark brown (3 to 5 minutes).
  • Drain the excess oil by setting the donut holes on a paper-towel-lined plate or baking tray.
