Danish Donuts

These traditional donuts are known as “dansk aebleskiver” in Denmark. Cooking them requires an electric aebleskiver pan. Try dipping the completed donut in jam or sugar.

Yields: Makes 48 Servings.

Ingredients

  • 8 eggs
  • 1 quart of buttermilk
  • ¼ cup of melted butter
  • 4 cups of all- purpose flour
  • 1 teaspoon of salt
  • 2 tablespoons of white sugar
  • 1 teaspoon of baking soda
  • 1 ½ tablespoons of ground cardamom
  • 2 cups of vegetable shortening, melted

Method of Preparation

  • Preheat an electric aebleskiver pan according to the directions.
  • Beat the buttermilk, eggs, and butter in mixing bowl until the mixture is smooth.
  • Add the flour, salt, sugar, cardamom, and baking soda. Stir until it is evenly blended and smooth.
  • Place 1 tablespoon of shortening into each cup of the aebleskiver pan, allowing the oil to heat.
  • Pour the batter into each cup so that each cup is ¾ full.
  • Cook the batter for 3 or 4 minutes, or until it is golden brown.
  • Use a long skewer to lift an edge of the donut and turn it slightly so that the uncooked batter spills over into the cup.
  • Continue lifting and turning the edges of each donut until it is fully cooked.
  • Allow the donuts to drain on a paper-towel-lined plate to remove excess oil.
