Chocolate Cake Donuts with Chocolate Glaze
These donuts are extremely rich because they are chocolate on chocolate. It is best to have a glass of milk nearby when you enjoy these!
Yields: Makes 15 to 20 donuts.
Ingredients
- 2 ½ cups of all-purpose flour
- 1/3 cup of granulated sugar
- 1 tablespoon of baking powder
- ¼ teaspoon of cinnamon
- ¼ teaspoon of salt
- 1 cup of milk
- 1 large egg, beaten lightly
- 5 tablespoons of unsalted butter, melted and cooled
- 2 teaspoons of vanilla extract Oil for frying
For the Glaze
- 4 tablespoons of unsalted butter
- 2 teaspoons of vanilla extract
- 1 teaspoon of light corn syrup
- ¼ cup of milk
- 3 ounces of dark chocolate, chopped
- 1 cup of powdered sugar
Method of Preparation
- Whisk the flour, baking powder, salt, cinnamon, and sugar in a large bowl. Make a well in the center of the mixture.
- In a separate bowl, combine the milk, egg, vanilla extract, and butter. Whisk well.
- Pour the wet mixture into the center of the dry ingredients. Mix with a large spoon. Stir until combined. The dough will be sticky.
- Cover it in plastic wrap and set the bowl in the refrigerator for an hour.
- Remove the dough and place it on the well-floured surface. Roll the dough out to be about ½-inch thick.
- Use a doughnut or biscuit cutter to cut circles out of the dough. Try using a bottle cap for the small circles if you do not have a donut cutter.
- Heat the oil in the large saucepan over medium heat. It should be 2 or 3 inches deep. Heat the oil until 360º F.
- Fry the donuts in batches of 2 or 3 for about 2 minutes per side. Each side should be puffed and golden brown.
- Remove the donuts with a slotted spoon and set them on paper towels.
- Heat a small saucepan over medium-high heat. Add the butter, vanilla, milk, and corn syrup. Whisk to combine.
- Once the butter is melted, reduce the heat to low. Add the chopped chocolate and whisk again to combine.
- Once it is smooth, remove the saucepan from the heat. Stir in the powdered sugar, and stir constantly until there are no lumps.
- Dip each donut into the glaze and cover with sprinkles. Let it sit for about 30 minutes before serving.
