Purple Donuts
These unique donuts have both a hint of lavender and a blueberry glaze. The combination will make you think it is almost spring!
Yields: Makes 8 Donuts.
Ingredients
- ½ cup of warm water
- 2 teaspoons of dried lavender
- 3 teaspoons of ground flaxseeds
- ¼ cup of light olive oil
- 1/3 cup of maple syrup
- 1 teaspoons of vanilla extract
- 1 teaspoon of apple cider vinegar
- 1 cup of all-purpose flour
- ½ teaspoon of baking soda
- ½ teaspoon of salt
For the Glaze
- ½ cup of powdered sugar
- 2 tablespoons of blueberries (thawed if you are using frozen fruit)
- 1 teaspoon of vanilla extract
- 1 to 2 teaspoons of milk
Method of Preparation
- Place 1 tablespoon of dried lavender in warm water for 25 to 30 minutes.
- Preheat the oven to 350º F. Lightly grease a donut pan.
- Strain the lavender tea and set aside.
- Blend the remaining lavender and flaxseed in a food processor until they are ground fine.
- Combine the lavender mixture with the lavender tea. Whisk well and set aside for 5 minutes.
- Combine the lavender mixture with the maple syrup, oil, vanilla extract, and vinegar. Mix until combined.
- Sift in the flour, salt, and baking soda. Mix until just combined.
- Put the batter into the donut pan, filling to ¾ full.
- Bake for 12 minutes. Allow the donuts to cool for 5 minutes in the pan. Then, transfer to wire racks to cool.
- Combine the glaze ingredients in a food processor. Add additional milk as necessary.
- Place the glaze in a bowl and dip the donuts in the glaze. All the glaze to set before serving.
