Purple Donuts

These unique donuts have both a hint of lavender and a blueberry glaze. The combination will make you think it is almost spring!

Yields: Makes 8 Donuts.

Ingredients

  • ½ cup of warm water
  • 2 teaspoons of dried lavender
  • 3 teaspoons of ground flaxseeds
  • ¼ cup of light olive oil
  • 1/3 cup of maple syrup
  • 1 teaspoons of vanilla extract
  • 1 teaspoon of apple cider vinegar
  • 1 cup of all-purpose flour
  • ½ teaspoon of baking soda
  • ½ teaspoon of salt

For the Glaze

  • ½ cup of powdered sugar
  • 2 tablespoons of blueberries (thawed if you are using frozen fruit)
  • 1 teaspoon of vanilla extract
  • 1 to 2 teaspoons of milk

Method of Preparation

  • Place 1 tablespoon of dried lavender in warm water for 25 to 30 minutes.
  • Preheat the oven to 350º F. Lightly grease a donut pan.
  • Strain the lavender tea and set aside.
  • Blend the remaining lavender and flaxseed in a food processor until they are ground fine.
  • Combine the lavender mixture with the lavender tea. Whisk well and set aside for 5 minutes.
  • Combine the lavender mixture with the maple syrup, oil, vanilla extract, and vinegar. Mix until combined.
  • Sift in the flour, salt, and baking soda. Mix until just combined.
  • Put the batter into the donut pan, filling to ¾ full.
  • Bake for 12 minutes. Allow the donuts to cool for 5 minutes in the pan. Then, transfer to wire racks to cool.
  • Combine the glaze ingredients in a food processor. Add additional milk as necessary.
  • Place the glaze in a bowl and dip the donuts in the glaze. All the glaze to set before serving.
