How to make

  1. If using an electric donut maker, preheat according to manufacturer’s instructions. If using donut pans, preheat oven to 350°F and grease donut pans.

These donuts are especially light and fluffy. There is no cake-based baking here, but the yeast-based dough does take a bit longer to make because it needs time to rise.

Ingredients

  • 1 egg ¼ cup of granulated sugar
  • 1 cup of warmed milk (115º F)
  • 1 tablespoon of active dry yeast
  • 1 teaspoon of salt
  • 2 teaspoons of vanilla extract
  • 2 ½ to 3 ½ cups of unbleached flour, divided (plus more for kneading)
  • 1 stick of butter, cubed

For the Topping

  • 1 stick of butter, melted
  • 1 cup of granulated sugar
  • 2 tablespoons of cinnamon

Method of Preparation:

  • Using a stand mixer with a paddle attachment, beat the egg and sugar together on medium speed for about 1 minute.
  • Add the yeast, salt, milk, and vanilla. Reduce the mixer to low.
  • Add 2 cups of flour.
  • Attach the dough hook and increase the speed to medium.
  • Add the butter piece by piece and mix until smooth. Then, reduce the speed to low.
  • Add the rest of the flour, and mix until the dough sticks to the hook. It should be soft and moist, but not sticky.

  • Coat a mixing bowl with cooking spray, and set the dough in the bowl. Cover with a damp towel and allow the dough to rise until it has doubled in volume. This usually takes about one hour.

  • Put the glaze into a baggie and cut a corner of the baggie.
  • Pipe the glaze over the top of the cooled donuts.

Batter

  • ½ cup white sugar

  • 1 egg
  • 1 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ cup milk

Topping

  • ½ cup butter, melted
  • ⅔ cup white sugar
  • 2 teaspoons ground cinnamon

Directions for Baked Cinnamon Sugar Donuts

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray 9 cavities of a 12-cavity doughnut pan with cooking spray.
  2. Combine sugar, butter, nutmeg, and salt in a medium bowl; beat with an electric mixer until well combined. Add egg and mix until incorporated.
  3. Combine flour and baking powder in a small bowl. Add flour mixture to butter mixture in batches, alternating with milk, beating batter briefly after each addition. Pour batter into a large resalable plastic bag.
  4. Snip off one corner of the bag and pipe batter into the 9 prepared cavities of the doughnut pan, filling each halfway.
  5. Bake doughnuts in the preheated oven until a knife inserted into the center comes out clean, 7 to 9 minutes.
  6. While the doughnuts are baking, place melted butter for topping in a shallow bowl. Mix together 2/3 cup sugar and cinnamon in another shallow bowl. Roll warm doughnuts in melted butter and then in cinnamon sugar to coat.
