Ingredients

  • 2 cups white sugar, divided
  • 1 tablespoon ground cinnamon
  • 1 ½ cups apple cider
  • 3 ¾ cups all-purpose flour, divided
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • ¼ cup butter, melted
  • 2 eggs, lightly beaten
  • 1 egg yolk, lightly beaten
  • 6 cups vegetable oil for frying

Directions

  1. Mix 1 cup sugar and 1 tablespoon cinnamon together in a resealable plastic bag.
  2. Bring apple cider to a boil in a saucepan; cook, stirring occasionally, until cider has reduced to 1/2 cup, about 20 minutes. Remove from heat and cool.
  3. Whisk 1 cup flour, 1 cup sugar, baking powder, 2 teaspoons cinnamon, and salt together in a large bowl. Mix butter, eggs, egg yolk, and cooled cider together in a separate bowl until smooth; stir into flour mixture.
  4. Stir remaining 2 3/4 cups flour into mixture until dough is smooth. Refrigerate dough for 10 minutes.
  5. Heat oil in a large pot or deep fryer to 375 degrees F (190 degrees C).
  6. Turn dough onto a well-floured work surface using floured hands; pat dough to 1/2-inch thickness. Cut dough into doughnuts using a doughnut cutter or 2 round cookie cutters (1 large and 1 small). Gather scraps and re-pat dough to cut out as many doughnuts as possible.
  7. Carefully slide doughnuts, working in batches, into hot oil; fry until doughnuts rise to the surface and begin to brown, 2 to 3 minutes. Flip doughnuts and continue frying until opposite side is browned, about 1 1/2 minutes.
  8. Remove doughnuts with a slotted spoon and place on a paper towel-lined plate to cool until easily handled, about 1 minute.
  9. Toss cooled doughnuts in the reserved bag of cinnamon sugar. Bring oil back to 375 degrees F (190 degrees C) before frying next batch.

INGREDIENTS

  • 1 cup all purpose flour
  • 11⁄2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon nutmeg
  • 1 large egg
  • 1⁄3 cup granulated sugar 
  • 1⁄2 teaspoon vanilla extract
  • 1⁄3 cup whole milk
  • 1 heaping cup peeled and chopped apple
  • Vegetable oil or peanut oil, for frying

FOR ICING

  • 1 tablespoon whole milk
  • 11⁄2 teaspoons vanilla extract
  • 3⁄4 cup powdered sugar

How to make

  1. Heat oil in a large, deep skillet or a deep fryer to 350°F.
  2. In a small bowl, sift together flour, baking powder, cinnamon, salt, and nutmeg. Set aside.
  3. In a medium bowl, whisk together egg and granulated sugar. Then add vanilla extract and milk, mixing until thoroughly combined.
  4. Gently stir in the flour mixture, stirring until there are no lumps. Gently fold in chopped apple.
  5. Once oil is hot, working with 4 to 6 fritters at a time, carefully drop rounded tablespoon of dough into oil. Fry for 1–2 minutes or until golden brown; flip each donut and fry the other side.
  6. Remove and drain on a plate lined with newspaper or paper towels. Continue this process until each fritter has been fried.
  7. Place wax paper under a wire rack to collect any drippings for an easy cleanup. Then, in a small bowl, whisk together milk and vanilla extract. Add powdered sugar, whisking until smooth.
  8. While the fritters are still warm, dip the top of each fritter into the icing, transfer to the wire rack, and let set for 2 minutes.
  9. Serve immediately; fritters can be stored in an airtight container for up to 3 days but are best served fresh.

Yields: Makes 14 donuts.

Ingredients

  • 2 ¼ teaspoon of active dry yeast (1 package)
  • 2/3 cup of whole milk, warmed
  • 3 ¼ tablespoons of all-purpose flour (plus 2 tablespoons)
  • 4 egg yolks
  • ½ cup of granulated sugar
  • ½ cup of apple cider
  • ¼ cup of unsalted butter, melted
  • 1 tablespoon of vanilla extract
  • 1 teaspoon of kosher salt
  • ½ teaspoon of ground cinnamon

For the Filling

  • ¼ cup of unsalted butter
  • 1 vanilla bean
  • 7 Granny Smith apples (peeled, cored, and chopped)
  • ¼ cup of granulated sugar
  • ½ teaspoon of ground cinnamon
  • 1 cup of apple cider ¼ cup of cider vinegar

For the Glaze

  • ½ cup of powdered sugar (plus 2 tablespoons)
  • ¼ cup of heavy cream
  • ½ teaspoon of vanilla extract
  • ½ teaspoon of kosher salt

Method of Preparation

  • Place the yeast into a mixing bowl. Pour the milk over the yeast and allow it to sit for 5 minutes.
  • Add 2 cups of flour, but do not stir. Cover with plastic wrap and set it in a warm place. Allow it to sit for 30 to 40 minutes, or when the flour’s surface cracks.
  • Whisk the egg yolks and sugar together in a medium bowl. Add the butter, vanilla, salt, cinnamon, apple cider, and 1 ¼ cup of flour until combined.
  • Add the yeast mixture. Use an electric mixture to beat the dough on low for 30 seconds. Increase the speed and beat for an additional minute.
  • Add the remaining 2 tablespoons of flour and mix for an additional 30 seconds. Increase speed to medium and beat for an additional 30 seconds.
  • Transfer the dough to an oiled bowl, and cover it with plastic wrap. Allow the dough to sit for about 1 and ½ hours, or until the dough has doubled in size.
  • To make the filling, melt the butter in a 12-inch skillet over medium heat.
  • Scrape the vanilla bean seeds until the pan with the butter, and then drop in the pod.
  • Heat the butter until is bubbles, then add the apples. Stir to coat them with butter.
  • Add the sugar and cinnamon and cook for 5 minutes, stirring occasionally.
  • Add the apple cider and vinegar. Increase the heat to medium-high and cook for about 10 to 15 minutes, or until the liquid has evaporated.
  • Remove the vanilla bean and cool the apples on a baking sheet.
  • Set the dough on a floured surface, and pat the dough into a rectangular shape about 2 inches thick.
  • Spread half of the apples in the center of the dough. Leave space around the edges.
  • Fold the dough into thirds by folding the bottom up first and then the top down.
  • Pat the dough into another rectangle about 2 inches thick. Spread the remaining apples on top of the dough, and fold into thirds again.
  • Roll the dough into a rough ball and return it to the bowl. Cover it, and allow it to rise an additional 30 minutes (or until doubled in size).
  • Heat the oil in a large Dutch oven over medium heat to 375º F.
  • Put the dough on the well-floured surface again, and pat it to 1/2-inch thickness.
  • Slice the dough into checkerboard pattern of 1-inch pieces with a pizza cutter or sharp knife.
  • Shape the pieces intro round mounds and let them rest for about 10 minutes.
  • To make the glaze, whisk the heavy cream, vanilla, powdered sugar, and salt in a medium bowl. Set the medium boil over a saucepan of simmering water over low heat.
  • Heat and stir occasionally until the mixture is warmed. Remove from the heat and keep warm.
  • Fry the dough mounds in the hot oil in batches. Fry for about 3 minutes on each side, or until golden brown.
  • Remove the donuts and place them on a paper-towel-lined pan or cooling rack.
  • Allow the donuts to cool for about 5 minutes, then brush them with the glaze.
  • Serve warm or at room temperature.

  •     1 ¼ cups confectioners’ sugar
  •     ⅓ cup pure maple syrup
  •     1 teaspoon vanilla extract
  •     2 cups oil for frying, or as needed

Directions for Apple Cider Donuts

  1. Bring 1 cup apple cider to a boil in a small saucepan; boil until reduced to 1/4 cup, 20 to 30 minutes. Cool.
  2. Beat butter in a bowl with an electric mixer until creamy, 1 to 2 minutes. Add 1 cup white sugar and beat until light and fluffy, 2 to 3 minutes.
  3. Beat eggs, 1 at a time, into butter mixture until completely incorporated. Mix buttermilk and reduced cider into butter mixture.
  4. Whisk 3 1/2 cups flour, baking powder, baking soda, 1/2 teaspoon cinnamon, salt, and nutmeg together in bowl. Add flour mixture to buttermilk mixture; stir until dough is just combined.
  5. Transfer dough to a lightly floured piece of parchment or wax paper. Sprinkle dough with flour.
  6. Turn dough over onto a baking sheet and sprinkle with flour.
  7. Roll dough to 1/2-inch thickness, sprinkling with more flour as necessary. Transfer dough on the baking sheet to the freezer until slightly hardened, about 20 minutes.
  8. Cut cold dough using a 3-inch doughnut cutter. Gather, roll, and cut any dough scraps.
  9. Transfer cut doughnuts and doughnut holes to a second, slightly floured, baking sheet. Refrigerate doughnuts for 20 to 30 minutes.
  10. Whisk 1 cup white sugar and 1/2 teaspoon cinnamon together in a bowl. Transfer cinnamon sugar to a paper bag.
  11. Whisk 1 cup confectioners’ sugar and 2 tablespoons apple cider together in another bowl. Whisk 1 1/4 cups confectioners’ sugar, maple syrup, and vanilla extract together in a third bowl.
  12. Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  13. Cook doughnuts and doughnut holes in batches in preheated oil, turning once, until golden brown and cooked through, about 1 minute per side. Set cooked doughnuts on paper towels to drain.
  14. Shake warm doughnuts in the paper bag with cinnamon sugar, or pour cider glaze or maple syrup glaze over warm doughnuts.

  • 1 tablespoon vanilla extract

Directions for Apple Butter Waffle Donuts

  1. Preheat your waffle iron.
  2. In a large mixing bowl whisk together the flour, baking powder, salt, and cinnamon. Set aside.
  3. In a medium bowl whisk together milk, apple butter, maple syrup, melted butter, and eggs.
  4. Pour the liquid mixture into the flour mixture and stir to combine. If the batter seems too thick, thin it out with more milk until the desired consistency.
  5. Cook your waffles according to the manufacturer’s directions for your waffle maker, and let them cool. (Mini waffles will cook faster than full sized.)
  6. Prepare the glaze. In a large bowl whisk together powdered sugar, 4 Tablespoons of milk and vanilla.
  7. The glaze will be think but not as thick as frosting. If it appears too think, thin it out with more milk. Set aside.
  8. Fill a high-sided pan with 2 inches of vegetable oil. Bring the oil to 365 degrees F. Once the oil is hot, add in about 4 waffles at a time and fry for 5 seconds on each side. (They should just crisp and turn a dark golden brown color.)
  9. Continue until all of the waffles are fried.
  10. Dip waffles one at a time into the glaze and let them cool on a rack in a rimmed baking sheet to harden. Serve the same day as making.

Since we’re not going to fry these, not only are they easier, but they’re way less messy. Less time cleaning up means more time eating donuts.

Ingredients for Baked Apple Cider Donuts

  • 2 cups fresh apple cider
  • 2 cups all-purpose flour
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • ¼ teaspoon fine salt
  • 1 teaspoon ground cinnamon
  • 1 pinch ground cardamom
  • 1 pinch freshly grated nutmeg
  • ½ cup white sugar
  • ½ cup packed brown sugar
  • ½ cup warm milk
  • 6 tablespoons unsalted butter, melted, divided
  • ¾ teaspoon vanilla extract
  • 1 large egg

Topping:

  • 1 cup white sugar, or as needed
  • 1 tablespoon ground cinnamon, or as needed

Directions for Baked Apple Cider Donuts

  1. Preheat the oven to 375 degrees F (190 degrees C). Butter two 6-cup donut pans.
  2. Pour apple cider into a saucepan and place over medium heat. Bring to a simmer and let it cook, watching carefully, until the cider is reduced to 1/2 cup. If it reduces too much, add enough water to make 1/2 cup. Set aside until needed.
  3. Add flour, baking powder, baking soda, salt, 1 teaspoon cinnamon, cardamom, and nutmeg to a large bowl. Mix with a whisk until combined and set aside until needed.
  4. Whisk 1/2 cup white sugar, brown sugar, milk, 2 tablespoons melted butter, vanilla extract, and egg together in another bowl until combined.
  5. Add the apple cider reduction and the dry ingredients. Whisk together to form a slightly thick batter; do not overmix.
  6. Spoon or pipe the batter into the prepared donut pans, filling them about 3/4 of the way up.
  7. Bake in the center of the preheated oven until the tops are lightly browned, and the donuts spring back slightly to the touch, 10 to 12 minutes.
  8. Let cool for 10 minutes in the pans before removing to a sheet pan lined with a silicone baking mat. Cut out any donut holes as necessary.
