Pineapple Upside Down Cake Mini Donut
If you’re looking for an icing free mini donut, then this is the recipe for you! Instead of the classic powdered sugar icing that you might expect, the brown sugar and pineapple found in this recipe pretty much frost these mini donuts all by themselves. Less work simply means more time to enjoy. What could be better?
INGREDIENTS
- 1⁄4 cup unsalted butter
- 1⁄2 cup packed brown sugar
- 20 ounce can crushed pineapple, drained
- 11⁄3 cups all purpose flour, sifted
- teaspoons baking powder
- 1⁄2 teaspoon ground cinnamon
- 1⁄4 teaspoon salt
- 1 large egg
- 1⁄2 cup granulated sugar
- 3⁄4 cup whole milk
- tablespoons vegetable oil
- 2 teaspoons vanilla extract
How to make
- If using an electric donut maker, preheat according to manufacturer’s instructions. If using donut pans, preheat oven to 350°F and grease donut pans.
- In a small saucepan, melt butter and brown sugar over medium heat. Bring to a simmer and cook, stirring constantly, until brown sugar has dissolved. Remove from heat and stir in pineapple. Set aside.
- In a small bowl, sift together flour, baking powder, cinnamon, and salt. Set aside. In a medium bowl, whisk together egg and sugar.
- Then add milk, oil, and vanilla extract, mixing until thoroughly combined. Gently stir in the flour mixture, stirring until there are no lumps.
- If using mini donut pans: Fill the bottom of each donut round with about 1 tablespoon of the pineapple mixture. Then, carefully top pineapple mixture with batter until each donut indentation is 3⁄4 full.
- Bake for 7–9 minutes or until a toothpick inserted into a donut comes out clean. Transfer donuts to a cooling rack. If using an electric mini donut maker:
- Fill the bottom of each donut round with about 1 tablespoon of the pineapple mixture.
- Then, carefully top pineapple mixture with batter until each donut indentation is 3⁄4 full.
- Bake according to manufacturer’s instructions or until a toothpick inserted into a donut comes out clean. Remove donuts from appliance and transfer to a cooling rack.
- Donuts are best when still warm and do not store well, so serve immediately.
