Gluten Free Donuts
These little donut holes are a great donut substitute. They are light and airy, resembling a yeast donut. Cover them in sugar, and your guests will never know they are gluten free!
Yields: Makes 4 Servings.
Ingredients
- 5 tablespoons of coconut milk
- ¼ tablespoons of gluten-free all- purpose flour
- 1 egg
- 2 tablespoons of almond flour
- 2 tablespoons of coconut flour
- 2 teaspoons of honey
- ¼ teaspoon of guar gum
- Oil for frying
Method of Preparation
- Heat oil in a saucepan or deep fryer to 300º F.
- Mix all of the ingredients in a bowl using a hand mixer. The batter should resemble a heavy pancake batter.
- Drop the batter in spoonfuls in the hot oil. Fry in batches. The donuts should be dark brown (3 to 5 minutes).
- Drain the excess oil by setting the donut holes on a paper-towel-lined plate or baking tray.
