Flaxseed Donuts
This donut is slightly healthier because of the flaxseed. It has just enough, but not enough that the kids will notice. Try topping these with your favorite glaze or a cinnamon-sugar topping.
Yields: Makes About 18 Donuts.
Ingredients
- 3 cups of all-purpose flour
- ½ cup of ground flaxseed
- 1 tablespoon of baking powder
- ½ teaspoon of ground nutmeg
- ½ teaspoon of ground cinnamon
- 2 eggs
- 1 cup of white sugar
- 1 cup of buttermilk
- 2 tablespoons of vegetable oil Oil for frying
Method of Preparation
- Whisk the flaxseed, flour, baking powder, nutmeg, and cinnamon together in a bowl. Set aside.
- Beat the sugar and eggs together in a separate bowl. Add the buttermilk and 2 vegetable oil.
- Stir the flour into the egg mixture until smooth. Keep adding flour until the mixture is firm enough to handle.
- Cover the bowl. Refrigerate for 10 minutes.
- Roll the dough out onto a heavily floured surface until it is ½-inch thick.
- Use a donut cutter to cut out the donuts. Allow the donuts to sit for 5 to 10 minutes.
- Heat the oil in a heavy-bottomed saucepan to 360º F.
- Fry the donuts in batches until golden brown on each side, or for about 2 minutes on each side.
- Drain the excess oil by placing the donuts on a paper-towel lined plate or baking tray.
